Close enough. An adapter with one band would be mono (one positive and one negative means one channel is possible. Two bands allows two separate positive conductors, so you can have two channels playing at the same time, stereo.
Some brands of cell phone have that third conductor on there to do various things like allow a mic. By inserting the incorrect one You are basically not lining up the metal bits correctly and won't get the same output you'd expect.
