I know this an old thread but I've only just got my wife an MP4 player and have had exactly the same, very frustrating, problem. It was by accident that whilst watching a movie file I paused it and then accidently hit the volume button and Voila! There was the volume adjuster. So it just seems the volume settings have to be done separately for each type of file and NOT whilst the movie is actually playing, unlike an MP3 music file.
I also found that older v3 versions of AMV Convert Tools are nowhere near as good as v4_25 and when the settings are -
Screen160x128
Normal convert
High quality Image
the movies and sound are of far superior quality than ANY earlier version with movie frame rates being very smooth.
If someone could have told me all this earlier this week I might not have been near to a nervous breakdown and saved the cost of a headphone amplifier
